Finnish cheesecake is a delightful dessert that combines the creamy richness of cheesecake with a light, fluffy texture. Here’s a delicious Finnish cheesecake recipe for you to try:

Ingredients:

Finnish Cheesecake Base

200 g digestive-biscuits

100 g melted butter

3 spoons sugar

Finnish Cheesecake Filling

800 g unflavoured cream cheese( Philadelphia or Viola)

2 DL sugar

3 spoons flour ( Corn starch or barley )

1 spoons Vanilla sugar

1 spoons lemon Juice and grated zest

2 DL crème frâiche

4 big eggs

On surface( not indispensable )

2-3 DL crème frâiche

2 spoons sugar

1 tsp vanilla sugar

Tools

Loose-bottomed, diameter 23-24 cm casserole

1 big bowl

deciliter measure

electric mixer or food processor

spatula

grater

greaseproof paper

Instructions:

Finnish Cheesecake BASE

1- place a sheet of baking paper between the bottom of the loose bottom pan and the edge ring.

cut off excess paper.

the base of the red silicone pan in the pictures is cream suitable for both cooking and serving the cake, so no baking paper is needed

2- melt the butter in a small saucepan on the stove or in a small bowl in the microwave

3- crush the biscuits either in a multipurpose or food processor or by hand in a mortar. you can also cut the biscuits into a plastic bag and crush them with a rolling pin by pressing

4- mix sugar and butter melt into the biscuit crumbs

5- apply the crumb mixture to the bottom of the pan either with your fingers or with a spoon.

it is important that the base is tight so that it stays in size when cut.

put the bottom in the refrigerator to wait for baking.

Finnish Cheesecake FILLING

1- preheat the oven to 175 degrees

2- mix the cream cheese in a large bowl until flexible with an electric or ball mixer. add sugar, crème fraîche, vanilla sugar, lemon juice and grated peel and flour

3- break the eggs one at a time into the filling and beat the mixture until smooth

4- pour the filling over the base and level the surface with a spatula

5- bake the cheesecake in the middle of the oven for about an hour. carefully lift the cake out of the oven and allow to cool before covering

6- the surface of the cake becomes beautiful when glazed thinly with French cream. take the cake from the oven and spread on top of the sugar and vanilla flavored french cream. Put in the oven for another 5 minutes
